Banana Bread Baked Oats

This Banana Bread Baked Oats is great when you might skip  breakfast because you are in a rush or simply like to have breakfast on the go. Make it on a Sunday and it will last the whole week!

Serves 6-8 

Ingredients

3 very ripe bananas

180ml lactose free milk

1 tsp vanilla extract

180g oats

2 tbs ground flaxseed

¼ tsp ground cinnamon

1 sp baking powder

50g roughly chopped walnuts

Instructions

Preheat the oven to 350F

Peel and mash 2 ripe bananas in a baking dish

Add the lactose free milk and vanilla extract and mix until well-combined.

Then add in the oats, flaxseeds, cinnamon, baking powder, and salt. Mix well.

Top with walnuts

Bake in the oven for 30-35 minutes until it looks firm and edges are golden.

Serve as desired – 2tbs live yoghurt is a good option! But peanut butter or berries also work well.

You can also serve warm or cold; leftovers will keep in the fridge in an air-tight container for up to 5 days
