If you’re looking for something light but tasty then this juicy, fresh salmon which is rubbed with Cajun seasoning and baked in less than 20 minutes is a safe bet!

Ingredients

2 salmon fillets

1/2-2 tbsp Cajun seasoning for salmon

1 tbsp extra virgin olive oil 

1 red pepper

1 courgette

6-9 baby potatoes

2 tbs garlic infused oil

Sal and freshly ground black pepper

Method:

Preheat oven to 180°C.

Rub some oil over the bottom of a large baking tray

Slice pepper, courgette and baby potatoes, mix it garlic infused oil and season to taste

Rub salmon pieces with olive oil and then Cajun seasoning all over. 

Place salmon skin down in the baking tray and spread veggies all around it. 

Bake for 20-25 minutes, depending on the thickness of salmon. 

Eat and enjoy immediately!
